Try this at home

I love this word. I have the same philosophy on relationships. Conformance is mandatory. (and sometimes it works)

My cookbook submission:

-Brad’s Trailer Trash Mexicali Casserole –

(Apologies in advance to the Boy for the tomatoes)

In a large heavy oven proof skillet brown:

(and if you don’t own a cast iron skillet you should really buy one and learn to love it)

1 Lbs lean ground beef
1 medium white onion

Add the spices of your choice but remember this is suppose to be Mexi

Once browned, add

1 medium can tomatoe sauce/puree
1 small can tomatoe Paste
One medium can cubed tomatoes /with water (I use the spiced up ones)
One can of Mexi-corn

At this point throw in anything else that sounds good and simmer to a bubbling slop

Preheat Oven to 425*

Mix up:

One package of Jiffy cornbread mix – per directions

Add & Mix in:

Two or three finely diced green onions
1/3 cup sour cream
1/3 cup sharp cheddar cheese

Pour ladle sized scoops of cornbread batter into the slop to form ‘dumplings’

Bake for 15-20 minutes till dumpling tops are dark golden

Scarf, w/salad and a red wine

Dearest, you are preaching to the choir about cast iron. Imma southern girl.

Mexicali casserole sounds right up my alley. Tomatoes just have to be pureed into submission and then he forgets they're there.

Re the flooding - I'm suprised she hasn't done anything yet either. I sent a message to King County asking about places to volunteer and/or donate money and goods, and they sent a message back saying you can call 211 from any phone in King County and it will give you info.

Hope your back is feeling better. I think I have that same heating pad. ;)
